lend a hand to hamburger

Hamburger helper over haul. Yeah, that’s what happened in the kitchen the other night. The very idea of legitimate hamburger helper makes me queasy. Even saying the words hamburger, and helper in the same sentence is difficult for me. It’s just so weird. The noodles, the strange sauce, and not to mention the lack of vegetables is just wrong!

… so why on Earth would I want to recreate this dish? Well for one, it wasn’t on purpose… It just kind of came together like that, and when thinking of what I could relate it to, hamburger helper popped into my mind. And two, it makes an EXCELLENT freezer meal. And I won’t discuss again my love for that type of cooking!

{ Disclaimer: Don’t be alarmed all you paleo folk. No, this recipe is by no means “paleo”… however, you could definitely make it that way. I’ve listed possible paleo-friendly substitutions, however, have yet to test them.}

Drum roll please… 

Say hello to Adult-Style Hamburger Helper.

Ingredients

  • 2 C Qunioa, cooked (Use spaghetti squash, or cauli-rice Paleo)
  • 1 medium white onion, chopped
  • 1-2 Red Peppers, chopped
  • 1 can Black Beans, drained & rinsed (Omit if Paleo- replace with more vegetables)
  • 1 lb ground beef
  • taco seasoning, to taste
  • sea salt & pepper, to taste
  • hot sauce, to taste
  • 1/3 C cheddar cheese (Primal friendly; Omit if Paleo)

Directions

  1. Preheat oven to 350F.
  2. Cook Quinoa according to directions on package.
  3. Meanwhile, in a pan, over medium heat, cook ground beef until no longer pink; Toss with taco seasoning.
  4. Chop the onion and red pepper, set aside
  5. Once the quinoa and ground beef are cooked, mix all ingredients together and transfer to oven safe dish.
  6. Bake for 20 minutes; sprinkle the top with cheese, and bake again until cheesy is melted.
  7. Enjoy!
